Som Tum, or green papaya salad, is a culinary cornerstone of Laos and Northeastern Thailand (Isaan). Traditionally a vibrant street food, it combines resourcefulness and bold, fresh flavors. Prepared in a clay mortar and pestle, it masterfully blends shredded green papaya with chili, lime, fish sauce, peanuts, and other regional ingredients, creating a symphony of spicy, sour, sweet, and savory notes that awaken the palate.
